Pickles have been getting a lot of love lately. People are coming up with the coolest recipes with them, and finally are giving them the attention they rightfully deserve.

One of those recipes is deep fried pickles with a twist– they’re stuffed with cheese. I know, you’re drooling already, right?

Well once you make them, you’ll be drooling even more. Here’s how.

Ingredients:

  • Kosher Dill Pickles
  • Mozzarella string cheese
  • Egg roll wrappers
  • Flour
  • 3 eggs
  • Panko bread crumbs
  • Seasoning(s) of your choice
  • Oil for frying

First, hollow out your pickles using an apple corer. Then, place in one mozzarella stick per pickle. Using a little bit of water to seal it, wrap the pickles in egg roll wrappers.

Once sealed, season your flour and breadcrumbs however you’d like. Dunk each pickle in the flour, then the egg, then the bread crumbs until thoroughly coated.

Heat oil in a skillet to 350 degrees F. Place in pickles a few at a time, making sure not to overcrowd the pan. Fry for about a minute and a half on each side, or until the outside is golden brown and crunchy.

Drain excess oil by letting them cool and drip on a wire rack, then serve. Need a good dipping sauce? Try this recipe for ranch dressing. It’s perfect for these!

Once you give these a try, you won’t be able to get enough of them. Seriously, I cannot stop eating them, and I may have a little bit of a problem.

Enjoy!
