Pimento cheese is an absolute staple in the south, so it’s no surprise to me that someone was enough of a genius to make it into a grilled cheese.
Not only is it absolutely delicious, but it’s unlike any other grilled cheese you’ve had in the past. I guarantee you’ll love it.
Here’s what you’ll need to make this deliciousness:
- bread of choice (she uses jalapeño cheddar)
- butter, softened
- pimento cheese
- sliced jalapeños (optional)
- cooked bacon (optional, I think the crispier the better, personally)
- sliced tomato (optional)
Don’t have pimento cheese on hand? Make your own. This is what you’ll need:
- grated extra-sharp cheddar cheese
- grated cheddar cheese
- diced home roasted pimento or roasted red peppers, or from a jar
- Dijon mustard
- smoked paprika
- cayenne pepper
- celery salt

Now for making the sandwich. Start by cooking your bacon if you decided to use it in the sandwich. Then, butter one side of your bread.
Add your pimento cheese, and any of the optional toppings you like: jalapeños, bacon, and tomato. Place the other slice of bread on top, then grill it up until the cheese is melty and the bread is crispy.
Now you’re ready to eat! I’m completely obsessed with this grilled cheese, and I make it as often as I can. You’re gonna be just as into it as I am!
