Here are the ingredients you’ll need:
- 2 tbsp. canola oil
- 1 cup diced carrots
- 1 cup yellow onions, chopped
- 4 cloves garlic
- 1 tbsp. fresh ginger
- 1 1/2 cups broccoli
- 3/4 cup red bell pepper
- 4 eggs
- 3 cups cooked brown rice
- 3/4 cup petite corn
- 3/4 cup petite peas
- 3-4 tbsp. soy sauce
- 1 tbsp. sesame oil
Cook It On Up
Start by heating a skillet over medium heat, adding your canola oil. Then add your carrots, onions, garlic, and ginger, and cook until softened. Add your broccoli and red pepper, then cook that.
Scrape the veggies to one side of the skillet and add your eggs, scrambling them. Once the eggs are cooked, add your brown rice, followed by the corn, the peas, soy sauce, and sesame oil.
Mix them all together, and your veggie fried rice is ready to go! Whether you serve it as a main dish or a side, you’re gonna want to eat a ton of this stuff once you try it.
