Fried Chicken The Keto Way

If you’re one of the many who are trying the keto diet, then there are probably a ton of things you’re missing right now.

For me, I’m missing mashed potatoes and french fries, but I’m missing something else a LOT more. Fried chicken.

That’s right, the breading of fried chicken isn’t keto, so no one eating keto can eat this deliciousness anymore. At least, that’s what you and I thought

I found a way, and I cannot believe I never thought of it before. It’s genius!

The secret? Pork rinds. That’s right, this magnificent fried chicken gets its crunch from fried pig skin. So crunchy, so flavorful, and so keto!

To get started on this recipe, first begin by gathering these ingredients:

  • chicken breast, cut in half
  • crushed pork rinds
  • shredded Parmesan cheese
  • egg
  • pepper
  • olive oil
  • coconut oil

Before you cook anything, start by placing your pork rinds in a Ziploc bag and crush them to make the crumbs for your chicken coating.

Add parmesan and pepper to those pork rinds to make the ultimate fried chicken coating. Now, it’s time for frying. In a bowl, beat an egg, then dip your chicken breast in there.

From here, dip the chicken into your crumb mixture. Make sure it’s completely covered before the next step. Heat up your olive oil and coconut oil in a frying pan.

Fry both sides until the internal temperature is 165 degrees F, or about 6-7 minutes each, roughly.
