For The Love Of Pie

Two types of pie are incredible during the spring and summer months: ones that are cold, and ones that are fruity. So what could be better than a fruity custard pie?

Prime season for rhubarb starts mid-April, but great rhubarb can be found all spring long. Along with some good strawberries and some custard, you’ve got one of the best pies you’ll ever taste.

Chef John from Food Wishes unsurprisingly made a delicious version of this pie. Wanna make it yourself? Let’s get started!

You will need:

  • sliced rhubarb
  • quartered strawberries
  • eggs
  • freshly grated nutmeg
  • milk
  • all-purpose flour
  • granulated sugar
  • very tiny pinch of salt
  • butter for “dotting”
  • pie crust for a 9″ pie
  • strawberry jam

Bakin’ It

Preheat your oven to 350 degrees F.

Start by prepping your fruit: slice your rhubarb and quarter your strawberries. Arrange them in your ready-to-bake pie crust, then it’s time to prepare your custard.

All you’ll be doing is whisking together your eggs, nutmeg, milk, flour, sugar, and salt. Then you’ll pour this over your fruit, filling up the pie. Dot your butter on top before baking.

Bake your pie for one hour. Take it out, and while still warm, combine the jam of your choice (I used strawberry) and water, microwave it, then paint it on to the pie.

Once this cools down, pop that pie in the fridge until cold. Slice it up and serve with some whipped cream. You’ve never had a pie like this before, and honestly, you’ve never had a pie this delicious.
