There’s nothing more delicious than a warm slice of cornbread covered in butter. At least, that’s what I’ve felt for all of these years.
Then I found pumpkin cornbread. It’s like regular cornbread, but 9,875 times better, especially for fall.
Every time I take a bite, it makes me wish it was fall every day!
I found this recipe from Delish, and the finished product is exactly that. Here’s how you make it.
To make this cornbread, you will need:
- Cooking spray for the pan
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tbsp. baking powder
- 1 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/2 tsp. baking soda
- 3/4 tsp. salt
- 1 cup pumpkin puree
- 1/2 cup sour cream
- 1/3 cup brown sugar
- 1/4 cup melted butter
- 2 eggs

Preheat the oven to 400 degrees F.
Whisk together all of your dry ingredients: cornmeal, flour, baking powder, cinnamon, nutmeg, baking soda, and salt.
