Primavera Chicken

I’m always trying to get more vegetables into my diet, but it isn’t always easy. In fact, making sure you have enough veggies can be hard if you aren’t eating salads all the time.

Well, in my opinion, it’s time we all eat more veggies while taking away all of the “blah” flavor that comes with them. Instead of classic veggie dishes, let’s try a primavera stuffed chicken!

That’s right, just create a chicken dish with a ton of Italian flavor… and a ton of veggies!

Here’s how to make it.

Gather these ingredients to get started:

  • 1 zucchini
  • 3 tomatoes
  • 1/2 red onion
  • 2 yellow bell peppers
  • 4 chicken breasts
  • 2 tbsp. extra virgin olive oil
  • kosher salt, to taste
  • black pepper, to taste
  • 1 tsp. Italian seasoning
  • 1 cup shredded mozzarella

Making The Chicken

Preheat your oven to 400 degrees F.

Start by slicing a zucchini in half, then slicing it into half rounds. Do the same with the tomatoes, red onion, and bell pepper. Now, it’s time to work with your chicken.

Grab your 4 chicken breasts and slice them about 3/4 of the way through. Stuff the veggies in those slices, making sure to have the veggies line up and stand up straight inside the chicken.

On a pan, place down your veggie-stuffed chicken and drizzle with olive oil. Season with salt, pepper, and Italian seasoning. Grate some mozzarella cheese on top of each chicken breast.

Now pop them in the oven for 25 minutes. Once they’re out and cooled off, that’s it! You’re ready to eat!
