Pickle Peanut Butter Popsicles

Pickles and peanut butter: whether they’re things you never have thought of putting together before, or a treat you’ve enjoyed in the past, they are indeed a great pairing.

Most people wouldn’t think of putting them together in a frozen treat, but believe it or not, this may be my new favorite summer treat.

HelloGiggles came up with this recipe and it’s the perfect sweet, salty, creamy combo you never knew you needed. Gather your ingredients and make your own. Here’s what you’ll need!

  • dill pickle juice
  • water
  • granulated sugar
  • seeded and chopped dill pickles
  • coconut oil
  • peanut butter chips (such as Reese’s)
  • roasted and salted peanuts, chopped

Stir together your pickle juice, water, and sugar in a small saucepan over medium heat. Cook and stir continuously until the sugar dissolves. Remove from the heat and set it aside.

Grab your popsicle molds and place some of the chopped pickles into each mold. Pour pickle juice mixture evenly into each mold, then insert your popsicle sticks and freeze 30 minutes to 1 hour.

Take them out of the freezer, then adjust the popsicle sticks and freeze until completely frozen. In the meantime, combine your coconut oil and peanut butter chips in a microwavable bowl.

Put it in the microwave in 30-second intervals, stirring after each and waiting until it’s all melted and mixed well. Dip the popsicles in the peanut butter mixture, sprinkle on peanuts, and you’re done.

You can either serve these immediately or you can put them on a sheet tray and freeze them until you’re ready to serve them. Either way, they’re surprisingly delicious!
