Who doesn’t love pancakes? These fluffy and delicious bad boys are the perfect breakfast treat.

Now I don’t know about you, but unfortunately pancakes aren’t always the quickest thing to eat in the morning, and if you tend to run late, you won’t always be able to make them…

…unless you have a mason jar laying around.

These pancakes are incredible, and if you prepare the batter beforehand, you’ll have it ready in a minute and a half.

The jar makes it super easy to take it on the go, too, so this has to be the most convenient breakfast ever.

Not only do I have one mason jar pancake recipe for you, I have 5, and they’re all amazing. I know, I know, don’t get overwhelmed.

These are from The Lady Behind The Curtain, and I can’t thank her enough for these recipes. I can’t stop eating these!

Here’s what you’ll need for each.

For Basic Pancake Batter

  • 1 cup pancake mix
  • 1 tablespoon flaxseed (optional)
  • 1 tablespoon chia seeds (optional)
  • 3/4 cup buttermilk or milk
  • 1 large egg
  • 1 tablespoon vegetable oil

For Peach Cobbler Pancakes

  • 5 tablespoons pancake batter
  • 1/4 cup (canned, frozen or fresh) peaches, diced
  • 1/2 teaspoon granulated sugar
  • 1/8 teaspoon ground cinnamon

For Maple Bacon Pancakes

  • 5 tablespoons pancake batter
  • 1/4 teaspoon maple extract
  • bacon, cooked and chopped
  • 1 teaspoon light brown sugar

For Blueberry Lemon Pancakes

  • 5 tablespoons pancake batter
  • 1/4 cup blueberries, fresh or frozen
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon lemon zest

For Strawberry Shortcake Pancakes

  • 1 cup pancake mix
  • 1 large egg
  • 1 tablespoon oil
  • 3/4 cup Sprite
  • 1/4 cup strawberries

The cooking instructions are the same for all 5: mix all of the ingredients together (except some of the strawberries in #5,) and microwave for 1 minute and 30 seconds.

Be careful removing these from the microwave, then top them with whatever you’d like.

All of them except the bacon pancakes are great with whipped cream, and as with all pancakes, they’re great with butter and syrup.
