Sweet potatoes: they’re beyond delicious regardless of how you eat them. I don’t know about you, but sometimes, I get tired of plain ol’ sweet potato pie or sweet potato casserole.
There has to be something else you can make with them that’s a little more savory, and I wanted to do that for Thanksgiving, so I decided to look up a savory sweet potato recipe.
These loaded sweet potatoes from Food Wishes were perfect, and I got to cooking them right away.
Here’s what you’ll need to make them.
- 4 orange-fleshed sweet potatoes, scrubbed clean
- 8 ounces bacon, sliced
- 1/3 cup sliced green onions
- 1/4 cup diced jalapeño
- 1/2 cup grated sharp white cheddar cheese, plus a little bit for the top

Preheat your oven to 400 degrees F.
Start by gathering your sweet potatoes and scrubbing them clean with some warm water. Set them on a baking sheet, poke them with a knife, sprinkle with a little olive oil, and bake for 35 minutes, or until tender.
Cook your bacon in a dry pan over medium heat until crispy, with the majority of the fat rendering out into the pan. Once it starts foaming, add in your green onions and jalapeños.
Once they soften a bit, take it off the heat and reserve. Take the potatoes out of the oven and let them cool off enough that you can handle them.
