Keto Cauliflower Baked Ziti: You Won’t Miss The Carbs At All

All The Flavor, None Of The Carbs

I love pasta dishes. If I had to eat one kind of food for the rest of my life, it would probably be pasta dishes. To save a few carbs from being ingested, though, I’d have to do some keto recipes.

For example, this cauliflower baked ziti has all of the flavor, but it has way less calories because it’s made with the cauliflower instead of the pasta! That, and it’s just as easy to make as the original.

So, how do we make it?

To make this keto ziti, you will need:

  • 1 head of cauliflower, broken apart
  • 1 tbsp. extra virgin olive oil
  • 1 onion, minced
  • 2 cloves of garlic
  • red pepper flakes, to taste
  • 1 lb. ground beef
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 2 tbsp. tomato paste
  • 1 tsp. dried oregano
  • 1 can crushed tomatoes
  • 2 tbsp. fresh basil, torn
  • 1 1/2 cups fresh ricotta
  • 2 cups shredded mozzarella
  • 1/2 cup parmesan

Start by preheating your oven to 375 degrees F.

First, start breaking apart your cauliflower and boil it until just tender. Drain it and set it aside. Sauté your onion, garlic, and beef in a skillet with the olive oil.

Season this beef with red pepper flakes, salt, and pepper. Once it browns, add the tomato paste, oregano, crushed tomatoes, and basil.

Now, it’s time to layer. Cover the cauliflower in your meat sauce, then mix it together. Place some of this mixture in a pan, then layer some ricotta, mozzarella, and parmesan on top.

Repeat this process over and over until you’re out of your meat sauce and cauliflower. Top with more cheese, then bake for 25 minutes.

Once it’s cooled off a little, you can serve it. It’s beyond delicious, and you won’t miss the carbs at all, I promise.
