I love crepes, especially the sweet kind, but Toasted’s tutorial on YouTube teaches us how to make cheesy egg crepes. I love breakfast, and I’m always on the lookout on how to make something new for breakfast. Cheesy eggs are a favorite, and I was thrilled when I figured out I can make this into a crepe style. However, this isn’t like traditional crepes. From what I’ve had, crepes are usually in a big triangular shape form. I thought this was a unique way to fold a crepe because the outer layer reminds me of a quesadilla. Also, you can follow along with the base of this recipe, and switch up the ingredients if needed. If I were to make cheesy egg crepes, I would add two different kinds of cheese and some sort of vegetables inside. This would make the cheesy egg crepe more wholesome and filling.

Ingredients:

  • Oil 
  • 1/4 cup Onion 
  • Salt to taste
  • 2 tbsp Water
  • 1 tsp Chaat masala
  • 1/2 tsp Coriander 
  • 1/2 tsp Cumin 
  • 1/2 tsp Chili powder 
  • 3 eggs
  • 2 tbsp Onion leaves 
  • 1 cup Milk 
  • 3/4 cup Flour 
  • Mozzarella cheese

Directions:

First, add oil to a pan and saute the onions until they’re translucent. Mix everything around, add seasoning and eggs. Scramble the eggs until cooked and set aside.

Next, once the crepe batter is finished, layout the crepe, add mozzarella cheese, eggs, and fold into a square. On a hot pan, drizzle oil and fry until golden brown.

In conclusion, these remind me of a different version of a quesadilla. I’ve never had a savory crepe before, but it looks amazing and cheesy. I think this would be easy and simple to make. This is another breakfast recipe that I can add to my list. Plus, I host a lot of brunches at my place, so I think this would be a great addition to add to my breakfast spread.
