Breakfast is my favorite meal of the day. Also, quesadillas are one of my favorite foods too. It’s so simple and easy to make, and having the two combined is magical. Apparently this recipe is viral and a TikTok breakfast quesadilla recipe. Cooking With Kiona on YouTube shows up close with great instructions on how to recreate this meal. She shows how to make homemade pico de gallo too. Breakfast can be boring sometimes because there are not that many varieties, which is why I like the idea of a breakfast quesadilla. These can be a great breakfast option for kids and can be cut into bite-size.

Ingredients:

  • 1/2 Cup Tomato
  • 1/4 Cup Onion
  • 1/2 Tbsp Lime Juice
  • 1/2 Tsp Cilantro
  • 1/4 or 1/8 Tsp Salt
  • 3 Eggs
  • 1 Tbsp Heavy Cream
  • Butter
  • 1 Tortilla
  • Cheese
  • Pepper
  • Salt
  • Bell Peppers
  • Onions
  • Chicken
  • Sour Cream

Directions:

First, quesadillas usually have pico de gallo on the side and sour cream, however, you can skip the step and go straight to making the breakfast quesadilla. Then, crack your eggs, add heavy cream, and whisk everything together. In medium-low heat, add the eggs and once it’s almost cooked, add the tortilla on top.

Next, flip the tortilla over and add the cheese. Once the cheese is melted, add whatever you like. In this case, she added bell peppers, onions, and grilled chicken. Then, just fold the quesadilla in half and press it down. Cook both sides until their golden brown.

Overall, this is a great recipe to start because you can change the inside ingredients with more traditional breakfast foods such as sausage or bacon. This can be served for breakfast, lunch, or dinner. Personally, for me, my breakfast quesadilla would include spinach, onions, and just cheese. I love the simple fresh omelet ingredients.
