Ingredients:
- 4.5 lbs of Potatoes (washed and scrubbed)
- Olive Oil
- Salt and Pepper
- 20 fl. oz of Sour Cream
- 4 Cups of Grated Cheddar Cheese (or any melting cheese you like!)
- 6 Slices of Streaky Bacon (chopped and fried) or any bacon/ham you like
Directions:
First, get the bacon cooked on a frying pan and let it sit on a towel so it soaks up any excess oil. Then, get the potatoes ready, take a fork, and make prick marks over the surface on both sides. Drizzle the potatoes with olive oil and bake at 425F for 40-45 minutes. Chop the potatoes into chunks for the casserole.
Next, in a large baking dish, start assembling the fully loaded baked potato casserole with the starting layer of potatoes, sour cream, bacon, and grated cheese. Repeat the layers until the baking dish is filled up. Then, bake in the oven for 30-35 minutes.
