Fruity Fritters
During the spring and summer, I love fritters. The fruitier, the better! These berry apple fritters have quickly become my favorite recipe, and I absolutely love them.
In addition to the fritters, there’s a yummy drizzle and a great sugary topping. What could be better than that? You’ll love eating them!
With all of that in mind, let’s gather those ingredients and start making your fritters!
For the lemon balm sugar:
- 10 lemon balm leaves, roughly chopped
- 4 tbsp. sugar
To make the lemon balm sugar, just use a mortar and pestle to grind the two together. Simple!
For the raspberry drizzle:
- 100g (roughly 3/4 cup) raspberries
- 2 tbsp. icing sugar
- 1/2 lemon, zest only
- 4 tbsp. water
Just blend the ingredients in a blender or food processor, and the drizzle is ready to use. Easy, right?
For the fritters:
- 100g (roughly 1/2 cup) assorted berries
- 1 granny smith apple, finely diced
- 70g (roughly 1/3 cup) butter
- 150ml (a little over 1/2 cup) water
- 160g (roughly 1 cup) all purpose flour
- 1/2 tsp. ground cinnamon
- a pinch of nutmeg
- 3 eggs, beaten
- oil for deep frying
In a saucepan, combine your water and butter and bring it to a boil. Whisk your cinnamon and nutmeg into your flour in the meantime.
Remove your butter mix from the heat and add your flour mixture to it. Mix until it pulls together in a dough. Let it cool for about 5 minutes, then add your eggs, whisking until a glossy mixture forms.
Finally, stir in your fruit. Then heat up your oil and deep fry. Cook each fritter for about 2-3 minutes or until golden. Then top with your sugar, drizzle, and more berries, and you’re done!
