Egg Speckled Cake

There’s never a bad time to eat cake, and I’ll look for any and every excuse to make another one. The closest holiday this time of year is Easter, so naturally, I went on a hunt for the perfect cake.

Luckily for me, I found it. This delicious speckled egg cake is an adorable spring confection absolutely perfect for spring.

This speckled cake has the same adorable pattern as some little robin eggs do, and the little nest on top gives it that little bit of flair that pulls it all together.

Whether you’re celebrating Easter or just want a cute new cake design, this is the cake for you. Not only is it beautiful, it’s delicious and super easy to make!

Here’s how to do it. First, gather your supplies. You will need the following:

  • all-purpose flour
  • sugar
  • baking soda
  • baking powder
  • unsalted butter
  • egg whites
  • vanilla extract
  • sour cream
  • whole milk
  • confectioners sugar
  • kosher salt

Make The Cake

Preheat your oven to 340 degrees F.
Like any other layered cake, you’ll need multiple pans to bake your batter in. Once you gather these, you can make your cake batter.
First, mix together your dry ingredients: the flour, baking soda, baking powder, etc. In a separate bowl, mix together your wet ingredients: butter, egg whites, vanilla, etc. Then, mix the two together.
Pour the batter equally into your pans (Preppy Kitchen uses 3,) and bake at 340 degrees F for 30 minutes. Remove from the oven, then cool completely before you move on to making the frosting.
Spread your blue frosting on to the cake, then use a solution detailed in the video below to speckle it with brown dots, just like a robin’s egg. For more tips and tricks, watch the video below.
