Dolly Parton is a living legend. Not only is she an incredible singer, songwriter, and performer, but she has an iconic and unique look, owns her own theme park, and is a great southern cook!
One of my favorite recipes I’ve come across from the mind of Dolly is her butterscotch pie. That’s right, all the deliciousness of butterscotch on a buttery flaky crust. I’ll let that sink in.
The recipe is really easy to make and is sure to please a crowd. Here’s how to make it.
To make this delectable pie, you will need:
- 1 3/4 cup chopped pecans
- 3 tbsp. and 2 tbsp. butter, softened and separated
- 1 cup and 3 tbsp. brown sugar, separated
- 1/2 tsp. salt, separated in half.
- 2 tbsp. cornstarch
- 2 tbsp. all-purpose flour
- 2 egg yolks, beaten
- 3/4 cup condense milk, diluted with 3/4 cup water
- 1 tbsp. vanilla extract
Preheat your oven to 375 degrees F. Coat a 9 or 10 inch pie plate with cooking spray.
For the crust, combine pecans, butter, sugar, and salt in a small bowl. Mix thoroughly. Transfer mixture into pie pan, and press evenly on the bottom and up the sides.
Bake for 10-15 minutes, then remove to cool. Reduce oven temperature to 300 degrees F.
Combine brown sugar, cornstarch, flour, butter, and salt in the top of a double boiler over medium-high heat, stirring to combine. Add egg yolks and continue to stir until incorporated. Then…
