Potato Power
You know what food is never a bad idea in my book? Potatoes. Whether mashed, baked, scalloped, fried, roasted or boiled, there really never is a bad time for potatoes.
That’s why when we decided to create this scalloped potato loaf recipe, I was elated… and I may have eaten most of it myself, which my coworkers may or may not have been mad at me for.
But I digress. The point is, this scalloped potato loaf is delicious. So delicious, it’s worth angering your coworkers so you can have a little extra. So do you wanna make it yourself? Here’s how!
You will need:
- 5 russet potatoes
- 1 tbsp. olive oil
- 1 onion, minced
- 1 lb. ground beef
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 tsp. garlic powder
- 2 tsp. paprika
- 14 oz. diced tomato
- 6 cups fresh spinach
- 13 slices mozzarella cheese
How It’s Made
Preheat your oven to 360 degrees F.
Like a lot of great potato dishes, this dish starts with some peeled and sliced russet potatoes. Once those are sliced, set them aside and prep your filling.
Start by sautéing your onion in 1 tbsp. of olive oil. Add your ground beef and season with salt, pepper, garlic powder, and paprika. Once the beef browns, add the diced tomato and spinach.
Mix in the spinach until it wilts, then your filling is ready. In a loaf pan, layer potatoes, mozzarella cheese, and filling until you reach the top. The sides should also have potatoes and cheese.
Bake for 90 minutes, flip it over, and you’re ready to serve!
Once you try this, you’ll be wanting to eat this deliciousness every day. It’s a perfect dinner, so add this to one of your weeknight meals!
