I love Pecan Pie at Thanksgiving and Christmas, I also adore anything made in a crockpot, this recipe suits me perfectly. I have been using my crockpot every day and the more I use it, the more I love it. In fact, I had this great idea to make my Christmas turkey and sides entirely in a series of crockpots since we were going to my Aunt’s for Christmas dinner.
This crockpot idea works perfectly for transporting holiday food from one house to another because you throw all the base pie ingredients in the trunk of your car and set the crockpots securely in an ice chest or arranged neatly in the back seat. When you arrive at your destination, you just plug everything back in and set the food back in. The real beauty of this is that these crockpots can be plugged in anywhere in the house and you don’t have to take up any of the hosts or hostesses space in the kitchen. I just threw all the Pecan Pie ingredients in the crockpot, the only thing that’s different here is that you will want to line the bottom of your crockpot with parchment paper.
Ingredients for Crockpot Pecan Pie
4 eggs
1 cup of light corn syrup
2 cups of sugar
1/2 cup melted butter
1 teaspoon of cinnamon
1 teaspoon of vanilla
1/2 cup chopped pecans
1) Whisk all those pie filling ingredients in a bowl.
2)Then place a pie crust on the parchment paper and pour in the pie filling ingredients.
Next, arrange pecans neatly across the top and cook the Crockpot Pecan Pie for 4 hours on high.
