I am a big fan of anything Creole or Cajun, and I love the great state of Louisiana. I recently found this video recipe tutorial by Smokin’ & Grillin’ Wit’ AB on YouTube, and I knew I had to try it. I have made quite a few of AB’s recipes, and they all have been outstanding. Sometimes we see a recipe tutorial that looks good, but it doesn’t taste like you thought it would, but AB’s recipes are always delicious because AB is a man that truly knows how to cook. AB adds a twist to this cornbread by adding Creole Kick, his favorite seasoning, and cooked rice. All-and-all, your family and guests will be in for a big treat the minute they taste this delicious Creole cornbread dish. The Creole cornbread goes great with beans and is perfect with AB’s Cajun Gumbo, but this cornbread is really good enough to eat on its own.
Ingredients For Creole Cornbread:
- 2 cups of cooked rice
- 2 large eggs (room temperature)
- 1 cup whole milk
- 1 cup yellow cornmeal
- 1/2 cup of chopped onion
- 1 to 2 tablespoons chopped jalapeno peppers
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/4 cup oil (or hog lard)
- 1 can of cream style corn
- 3 cups of shredded cheddar cheese
- 1 teaspoon Creole seasoning (Creole Kick is AB’s favorite)
- 1 teaspoon cumin
- Small shrimp can be added as well
- 2 to 3 tablespoons of chopped jalapenos (with seeds for extra bite)

Then You add your Creole cornbread batter to a greased and floured cast iron skillet or baking pan and cook at 350°F for 50 minutes.
This cornbread is delicious and we wouldn’t expect anything less from a wonderful cook like AB.
