Pickles & Cupcakes: An Unlikely Duo

Pickles in a cupcake. It sounds absolutely awful when you first hear it, but it’s not nearly as terrible as it sounds. In fact, you may actually like the sweet and tangy flavors together.

Crazy as it sounds, pickle cupcakes are actually kind of good. I know, I know, you don’t believe me. Even if you think these are going to be absolutely disgusting, you can use this recipe to prank friends.

Regardless of how you feel about pickles, this recipe can come in handy in your repertoire. You love pickles? You try these. You hate pickles? You make others try these. It’s a win-win.

How It’s Made

I found this recipe from Delish, and they couldn’t really make it any easier if they tried. Take a classic cupcake batter and add some pickle-y goodness in the form of the juice and some bits.

You’ll also give the cupcakes a gorgeous buttercream frosting infused with bourbon– it goes great with the pickle flavor!

Here’s what you’ll need to get started:

  • all-purpose flour
  •  baking powder
  • kosher salt
  • butter, softened
  • sugar
  • sour cream
  • eggs
  • pickle juice
  • chopped pickles

Good luck and enjoy (or not, if that’s what you’re aiming for).
