I’ve always loved snacking on chips. Whether it’s a side dish with lunch or a snack at 3PM, I always reach for them. Unfortunately, chips aren’t the healthiest.
Unless you eat them like this. Zucchini chips exist, and they’re the low-carb, keto-friendly, crunchy and delicious alternative to potato or corn chips that you’re gonna love.
The recipe comes from delishrecipes on YouTube, and the flavor is cool ranch. Considering Cool Ranch Doritos are my lifeblood, I was incredibly excited to try these. Here’s how you make your own.
Here are the ingredients you’ll need to make this deliciousness:
  • 2 zucchini, sliced very thinly into coins
  • 1 tbsp. extra-virgin olive oil
  • 1 tbsp. ranch dressing mix/seasoning
  • 1 tsp. dried oregano
  • kosher salt, to taste
  • freshly ground black pepper, to taste
Start by preheating your oven to 225° F. Grease a large baking sheet with cooking spray. Slice zucchini into very thin, equally-sized rounds. Pat zucchini with paper towels to draw out excess moisture.
Grab a large bowl and toss your zucchini with oil, then toss in ranch seasoning, oregano, salt, and pepper. Place in a single layer on baking sheets.
Bake until crispy, about 1 hour 20 minutes, checking after about an hour. Let cool to room temperature before serving. It should get extra crispy as it cools!
These are a great alternative to plain ol’ potato chips. Not only are they low carb and keto-friendly, but they’re absolutely delicious. I guarantee that once you make these, you’ll want to eat them all the time!
