The Best Cornbread

When it comes to those summer time chili cook offs, nothing goes better with the chili than some cheese on top and some cornbread for dipping, am I right?

Finding your favorite chili is only part of what makes that meal absolutely perfect. The right cornbread is what completes the meal, and there are so many to choose from.

There’s honey cornbread, spicy cornbread, and so much more. For chili, there is only one cornbread option in my opinion, and that’s cheese-stuffed.

That’s right. Imagine the most deliciously sweet cornbread you’ve ever had, except it’s stuffed with creamy, melty, salty and spicy pepper jack cheese.

Hold back the drool and get ready to actually make this stuff. Whether you eat it with chili, with some backyard barbecue, or even by itself, you’re going to be obsessed with this stuff.

I found the recipe from Delish on YouTube, and it couldn’t be any more delicious. To get started on making this cornbread yourself, here’s what you’ll need:

  • buttermilk
  • unsalted butter
  • honey
  • large eggs
  • all-purpose flour
  • yellow cornmeal
  • baking soda
  • salt
  • pepper jack cheese, cubed

Start by preheating your oven to 375 degrees F.

Start by whisking together your buttermilk, butter, honey and eggs in a medium bowl. In a separate large bowl, combine your flour, cornmeal, baking soda and salt.

Pour wet ingredients into the dry ingredients and stir until mixed well. Grease a medium-sized cast iron skillet, then lay down half of your cornbread batter.

Lay over your cheese in and even layer, then pour over your remaining cornbread batter and spread it out, completely covering the cheese.

Sprinkle cheese on top to create an even layer. Pour remaining batter and spread to cover the cheese. Bake for 25-30 minutes, until the cornbread is golden and cooked through.

Let the cornbread cool for at least 5 minutes before serving, and you’re good to go. Prepare for the most intoxicating cornbread experience of your life.
