Cajun Mac & Cheese
I love cajun food: gumbo, jambalaya, crawfish and more. I also love creamy, delicious macaroni and cheese. I never thought to combine the two, but Delish did, and it’s genius.
I decided to make it myself, and I’m super happy I did. It’s such a delicious combo and you’ve got to try it. Let’s start by gathering the ingredients.
You will need the following:
- olive oil
- red peppers
- onions
- salt
- garlic
- andouille sausage
- shrimp
- cajun seasoning
- green onion
- butter
- flour
- milk
- cheddar
- monterey jack
- cooked pasta (macaroni or something similar)

The sauce cooks pretty quickly, so you can begin boiling your pasta around halfway through the sauce making process.
Start by sautéing your red peppers and onions in olive oil. Add a bit of salt to draw out the moisture and season the vegetables. Then, add your garlic and sausage.
After sautéing for a bit, add your shrimp and cook it through, seasoning it with cajun seasoning and green onions. Once cooked, put in a bowl and set aside.
In the same pan, melt your butter and add your flour to make a roux. Pour in your milk and add more cajun seasoning, along with any other seasoning you’d like.
Now, mix in your cheeses until they melt. Add back in your sausage and shrimp mixture to the sauce, along with the pasta. Season more as necessary, and you’re done!
Pour the mixture in a bowl and serve. This stuff is the perfect mixture of creole dishes like gumbo and jambalaya and the classic mac & cheese. If you’re a fan of southern food, this stuff is heaven!
