Easter is the perfect time for some bright, beautiful springtime desserts. If you want to get extra festive this Easter, you should try the ultimate Easter cookie: the bunny butt!

I know, it may not sound appetizing in theory, but the adorable look of those bunny butts combined with the delicious flavor make this the best Easter dessert. 

Wanna make it yourself? Let’s begin by gathering your ingredients.

Here are the ingredients you’ll need for these little cookies:

  • unsalted butter, room temperature
  • granulated sugar
  • all-purpose flour
  • baking powder
  • kosher salt
  • egg
  • milk
  • vanilla extract
  • almond extract
  • white and pink royal icing
  • miniature marshmallows
  • white sprinkles

Making The Cookies

Preheat your oven to 350 degrees F.

With an electric mixer (preferably a stand mixer), beat together your butter and your sugar. Once it’s light and fluffy, add your egg, vanilla, and almond extract.

In a bowl, combine your flour, baking powder, and salt. Whisk it together, then begin incorporating it into the wet mixture. You can watch Southern Living‘s video below to learn how to do that properly.

Now that you’ve got your dough, roll it out into a long cylinder, smoothing out the edges with your fingers to form a circular shape. Wrap the cookie dough in plastic wrap, and pop it in the fridge for an hour.

After removing the dough from the fridge, cut down the log in 1/4″ increments. These little ovals will become the bunny’s butt. You’ll bake two-thirds of these as is.

The other third will be cut into fourths and rounded out to make the little feet. Place these on parchment lined baking sheets.

You’l bake these for about 9 minutes, rotating them about halfway through for even cooking. Once those are completely cooled, it’s time to decorate!

The feet will be covered in the white icing. Once that dries, use the pink icing to make the little toes and foot pads. Too cute!

For the body, cover in white icing and white sprinkles, and use a marshmallow for the little tail. Stick the feet on to the butt with icing, and you’re done!
