A Healthier Alternative

Buffalo sauce and chicken go together like peanut butter and jelly. Once you try it once, you just can’t get enough of it. Especially when it’s a healthier route!

Instead of indulging in buffalo wings every night, have something even better: a buffalo chicken bowl! You’ll want to have this for dinner every week once you try it, I promise.

Want to make it yourself? Here’s how.

You will need:

  • 1 head of cauliflower
  • 1/4 cup buffalo hot sauce
  • 2 tbsp. butter
  • 2 tbsp. olive oil, separated into 1 tbsp. each.
  • salt & pepper to taste
  • 1 lb. boneless skinless chicken thigh
  • 1 lb. broccoli

Putting It Together

Making this bowl is super easy. Chop a head of cauliflower into small-ish pieces then put it into a food processor to make it into rice-sized granules.

Sauté the cauliflower in 1 tbsp. of olive oil with salt and pepper until tender. Mix together the butter and buffalo sauce in a bowl. Sauté the chicken in the remaining olive oil, and add the broccoli as well.

Cover the chicken and broccoli with a lid and steam until the broccoli turns bright green. Add the buffalo butter sauce and mix well until combined.

Put everything together in a bowl and it’s all ready to go!
