Breakfast casseroles can make your mornings a little easier. This breakfast casserole by Cooking With Shirani is so simple and easy to prepare to pop in the oven when you get up. It’s so convenient if you have busy mornings. Also, it’s a great recipe for parents who have kids because you can add all the nutritional ingredients in one casserole. In addition to that, if you have a lot of company or friends over, this would be enough food to serve everyone. I haven’t been a casserole person, but I don’t mind them, They are very easy to make in large portions.

Ingredients:

  • 1 lb bulk sage pork sausage
  • 1 cup green bell pepper, chopped
  • 1 cup red bell pepper, chopped
  • 10 eggs
  • 2 cups whole milk
  • ¼ tsp ground black pepper
  • ½ tsp garlic powder
  • ½ tsp salt
  • 3 cups frozen country-style hash browns
  • 1 cup French’s crispy fried onions
  • 8 oz cheddar cheese
  • hot sauce, optional

Directions:

First, brown the sage pork sausage on a nonstick pan on medium heat. Add the bell peppers to the pan and cook until they are soft. This adds a colorful touch to the casserole, but add any other vegetables that you prefer.

Second, whisk enough eggs in a bowl with whole milk. Start assembling the casserole by greasing the pan with cooking spray. The first layer of the casserole should be half of the hash browns since there will be two layers. Then, add the sausage mixture, fried onions, and cheese. Repeat the process. Pour the egg mixture on top and it’s ready to bake in the morning.

Some things to note:  let the casserole sit in the fridge overnight, and before cooking, let it sit out 20-30 minutes before baking.

Bake the casserole at 350F for 40 minutes uncovered. Then, cover with foil and bake for 10 more minutes. This breakfast casserole recipe is perfect for those that like to prepare things the night of so you’re not scattering around in the morning to cook something.
