The Ultimate Breakfast

There’s nothing that starts your day off right quite like a great breakfast. A big cup of coffee, some eggs, some bacon, some potatoes… you get the picture.

But why go for all of that when you can combine most of it? If you stuff a baked potato with all of that breakfast goodness, your breakfast is even better than it would’ve been.

In fact, it’s a perfect food to serve for brunch! 

So, with all of that in mind, let’s make this deliciousness, shall we?

To make these scrumptious potatoes, you will need:

  • 3 small russet or Yukon gold potatoes
  • 2 tbsp. olive oil
  • 2 tsp. salt for the outside of the potato
  • 1 tbsp. butter
  • 2 oz. cheddar cheese
  • 1 tbsp. cooked bacon
  • 3 eggs
  • 2 tsp. salt for the eggs
  • 1 tsp. pepper for the eggs
  • 1 tbsp. fresh chives

Preheat your oven to 350 degrees F.

Start by washing your potatoes thoroughly. Then, poke the potatoes all over with a fork, making tiny holes for the steam to escape. Drizzle with olive oil, season thoroughly with salt, and now it’s time to bake.

Bake your potatoes for an hour, and then take them out and let them cool enough for you to handle them. Then, cut them open like you would a baked potato, and scoop out about 75% of the flesh.

From here, add your butter, cheese, and cooked bacon. Finally, crack in your eggs. Season with salt, pepper, and chives, and pop them back in the oven for 25 minutes.

Then that’s it, you’re done!
