I love blueberries, I count the minutes and cannot wait till they are in season every year. Luckily we can get blueberries most of the year-round in the supermarkets, but if you are a blueberry lover like me, you will know the difference in the taste of fresh organic blueberries grown in Main as soon as they hit your tastebuds. I was so excited to see these organic blueberries grown in Main when I went to HEB Grocery Store this morning, I have to admit, I bought way too many tubs of them so I started searching for recipes as soon as I got home to utilize some of these blueberries because I really wanted to avoid freezing them, not that it really matters, but I love them fresh. I found this delicious recipe for Blueberry Lemon Poke Cake and it looked so delicious, I knew I had to try it. I first put a carton of the fresh blueberries in a saucepan along with 1/4 cup flour, 1/4 cup sugar, and 1/4 cup water and cooked the blueberries down to a lumpy delicious syrup.
Then I let that cool and poked holes in the ordinary yellow boxed cake I made in a sheet pan.
Then I mixed up some vanilla instant pudding and poured it all over the cake, this is where it seeps into the holes you poked, that’s why it’s called a poke cake, lol. Then I put the blueberry mixture all over the top of the pudding and let the whole glorious combo set and absorb.
