The Ultimate Potato Salad
When I was younger, I’d spend a lot of time at my friend Nicole’s house. Since I was over so much, her parents would have a tub of potato salad in the fridge at all times.
Needless to say, I love potato salad. So much so in fact, that Nicole’s parents ended up purchasing potato salad pretty often.
I never thought a classic potato salad could get any better than it already was, but I was wrong. How do you make a potato salad better? Use ranch dressing, crispy bacon, and cheddar cheese.
Trust me, if you have this potato salad once, there’s no going back. All of those spring and summer gatherings will be nothing without this on the table.

- russet potatoes, peeled and cubed
- your favorite ranch dressing
- extra virgin olive oil
- ranch seasoning
- cooked bacon
- chopped green onions
- shredded cheddar cheese

Making The Potatoes
Preheat your oven to 350 degrees F.
After you wash, peel, and cube your potatoes, place them in a baking dish and drizzle with olive oil. Coat the potatoes in ranch seasoning, then pop them in the oven until fork tender.
In the meantime, fry up your bacon until it’s your preferred level of crispiness. Chop up the bacon into smaller pieces.
Take the potatoes out of the oven and let them cool. Drench with the ranch and toss until every potato is fully coated. Toss in some green onions, then dump it in your serving bowl.
Top with your cheese and bacon, as well as more green onions. If you want to spice up this recipe even more, you can add some cooked chicken as well. It’s beyond delicious!
