The Cheesecake Factory is my favorite restaurant in the whole world, my family took me there for my Birthday and I tried their Avocado Egg Rolls, OMG, they were so exquisite and I could not stop thinking about them for weeks! So recently while I was browsing recipes on Youtube, I came across a Copycat Cheesecake Factory Avocado Egg Roll Recipe and I was overjoyed to realize I could make the succulent morsels in the comfort of my own home. I couldn’t wait to get get started so I carefully assembled my ingredients together and got down to some big egg roll business. Did I mention the sauce? Wait till we get to that part because the sauce is almost better than the egg rolls themselves, you are not going to believe how delicious these cool copycat egg rolls are!
Ingredients:
- 15 egg Roll Wraps
- 3 Barely Ripe Avocados (do not use ripe avocados)
- 1/3 cup chopped Cilantro
- 1/3 cup diced Red Onions
- 4 tbsp Sun-Dried Tomatoes (in oil)
- 1/2 tsp salt
Sauce:
- 4 tsp White Vinegar
- 1 tsp Balsamic Vinegar
- 1/3 cup Honey
- 1/2 cup chopped cashews
- 1 cup fresh cilantro (chopped)
- 1 tbsp Sugar
- 1 tsp Black Pepper
- 3 tbsp Olive Oil
Sauce Directions:
Mix all ingredients together in a food processor till smooth. The Avocado Egg Rolls also go great with Sweet Chili Sauce, which you can find at your local grocery store.
First, add the avocados, cilantro, red onions, salt, and sun-dried tomatoes to a mixing bowl and mix well, (avocados should look a little melty)
Then lay your egg roll skins out and place a small amount of avocado filling inside, then brush a little oil around the edges and roll up into neat little packets
Then deep fry your neatly wrapped egg rolls for about 12 to 15 minutes
Then slice them on an attractive diagonal and plate them up with that delicious sauce in the middle
These Cheesecake Factory Copycat Egg Rolls are so delicious and you can see from the photos above they are not difficult to make. I highly recommend this recipe, it will not disappoint.
