Apple Cider Cupcakes Are Delicious No Matter The Time Of Year

Holidays All Year Round

The holidays may have ended a little while ago, but I adore holiday flavors: cinnamon, apples, pumpkin, all of it! I’ll eat them at all times of the year, whether I have the holiday cheer or not.

Even though Thanksgiving, Christmas, and New Years are over, I was hankering for some cupcakes that packed a ton of holiday flavor. Naturally, I can’t stop making this apple cider cupcake recipe as a result.

So if you can’t let the holidays go, much like I couldn’t, you can make these cupcakes and relive all of the holiday bliss! Here’s what you’ll need to make them:

  • 2/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 1/2 tsp. kosher salt
  • 1/2 cup olive oil
  • 1 tsp. vanilla extract
  • 2 eggs
  • 1 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1 1/2 cups flour
  • 3/4 cup apple cider

If you’d like frosting on your cupcakes, you’ll need the following:

  • 8 oz. cream cheese
  • 1/2 cup unsalted butter
  • 2 cups powdered sugar
  • 2 tbsp. apple cider
  • 2 tsp. vanilla extract
  • cinnamon, for topping

Let’s Bake

Preheat your oven to 350 degrees F.

In a bowl, combine brown and granulated sugar, salt, olive oil, and vanilla. One at a time, whisk in your eggs. Add your baking soda and cinnamon. Mix well.

Add your flour and apple cider in increments, mixing each time until combined. Fill a lined muffin tin with the mix, then bake for 20 minutes. In the meantime, make your frosting.

Mix together the cream cheese, butter, powdered sugar, apple cider, vanilla extract, and cinnamon. Whisk until thoroughly combined, then pipe on to your cooled cupcakes. Top with cinnamon.
