A Toddler Could Bake These One Bowl Lemon Brownies

When you think brownies, you probably think chocolate. That’s all fine and dandy, but I prefer other flavors to chocolate, like lemon for example.

I found a recipe by Jenny Can Cook on YouTube that helps with my lemony cravings… one bowl lemon brownies!

This one bowl lemon brownie is my favorite dessert right now. I can’t get enough of them, and they’re just beyond delicious. That, and they’re so easy to make, a toddler could do it!

Brownie batter:

  • all-purpose or whole wheat pastry flour
  • granulated sugar
  • salt
  • baking soda
  • eggs
  • plain Greek yogurt
  • vegetable oil
  • lemon zest
  • fresh lemon juice
Glaze:
  • powdered sugar
  • lemon zest
  • fresh lemon juice

Start by preheating your oven to 350° F.

Now, line an 8 x 8 or 9 x 9-inch square pan with foil, leaving extra room on the foil for “handles.” This will help you lift the brownies out of the pan later.

Put all of your ingredients into a bowl. There’s no need to mix the ingredients in separate bowls for wet and dry. This one is all-in-one!

Mix everything together in that one bowl, stirring by hand until smooth for about 30 seconds. Spread your batter in the pan and bake for about 20 minutes.

Now mix together the ingredients of your glaze, adjusting the ingredients as necessary to fit the consistency you want. 

Cool for about 10 minutes before you use the foil to lift the brownies out of the pan. Spread your glaze over the warm brownies, and you’re ready to eat!
